Google Analytics setup expert required - broken Magento 2 GA tracking

PRIMARY TASK
We need some help in auditing the GA setup of our new Magento 2 site. We are using the M2 default settings to add the GA code but it is not tracking correctly.

Our Search Console and Adwords numbers are much higher than what GA is attributing since go live, but the numbers in those sources are either consistent or up compared to before go live - its definitely not a traffic issue, but a tracking issue.

We expect this will only take a couple of hours for somebody with the relevant experience- please only get in touch if you know you can fix this issue please, preferably if you have seen it before.

SECONDARY TASKS
- Check Google Adwords Tracking and if its set up properly
- Check Bing Tracking and if its set up properly
- Install the Google Reviews on our Website
