Structural Engineer needed to remove ceiling joists for vaulted ceiling

I have a detached garage that I am converting to living space in California. I would like to have vaulted ceilings and need advice on the best way to remove the ceiling joists. The room is roughly 16 x 20 and has a hipped roof.
